in the presse in identical proportions, with a touch of Viognier

After
the must has been yeasted, it
is fermented at 17°C to a density of 1010, then poured into new barrels. The
barrels are chosen according to the vintage, to create a harmony between the wine
and the origins of the oak.

Two wines will be produced from
2004 : one will emphasise aroma and finesse, while, with the other, we will work
on strength, with partial fermentation in new barrels.
- Both wines will
be blended as the grapes are brought in from harvesting. This vinification method
is one of font Alba's distinctive features.
