Blanc
passerillé : vin de Paille
(a white wine made with desicated grapes)
Made
from old vines : Ugni Blanc, Viognier, Clairette, Roussanne and Grenache Blanc.
The grapes are harvested at maximum ripeness towards the end of October, then
placed on shelves of barley straw to air for severals months to obtain the concentration
required : a minimum potential of around 25°.
After pressing, the must is poured into new barrels.
Fermentation last from 7 months to 2 years, then the wine is decanted a number
of times and bottled after sterile filtration.
As
the wine is extremely rich, it is perfectly normal to see sediment at the bottom
of the bottle, as in the days of old port.
It may be laid down for several decades.
An
amber colour with a complex, open nose gives candied fruit, honey, toffee and
brown sugar aromas. Full bodied and beautiful balanced. The wine superbly combines
sweetness and body with a hint of acidulation and a long finish on the flavours
noted in the nose.
Drink
cool but not chilled.
Serving suggestions : goat's cheese, Roquefort, foie gras, dessert or aperitif.
